The anaerobic natural process is where the transformation happens. Freshly harvested cherries are sealed airtight and left to ferment slowly for up to 168 hours, with temperature carefully controlled. What emerges is then laid to dry on raised beds for nearly a month — patient, attentive, and deliberate. Enhances flavours without letting funkier notes dominate — striking a balance between fermented character and strawberry and chocolate notes.
